A traditional popular anytime snack originally from Gujarat in West India- Dhokla is a steamed
preparation made from fermented batter of rice & lentils with a tangy sour taste.

Preparation:
1) Mix 60ml fresh or sour yoghurt (dahi), 240ml of water and 45ml oil. Tip: For spicer taste add 2 tsp. ginger and green chilli paste.
2) Add Khatta Dhokla Mix gradually. Blend gently for 1 minute until batter is smooth.
3) Grease 2 baking trays with oil. Pour equal quantities of batter into each. Sprinkle black pepper or red chlli powder to garnish.
4) Steam on high flame for 12 mins. If pressure cooker is used do not apply weight / whistle. Allow to cool for 5 mins. Cut Khatta Dhokla pancake into 5cm cubes or wedges.
Tip: Heat 30ml oil. Add 1tsp. mustard seeds. 2 pinches of asafoetida powder and curry leaves. Spread evenly over pancake. Sprinkle 2tbsp. chopped coriander leaves. Serve hot with green chutney. |
